Sara's Recipe of the Week - Air Fryer Asparagus

This is my new favorite way to make Asparagus! You have to try this!

Crisp, yet tender Air Fryer Asparagus is so quick and easy to make! This favorite-veggie-of-Spring is cooked to perfection every time!

Do we agree that asparagus is the best vegetable?

Okay, it might not be better than my favorite roasted kabocha squash with peanut sauce, but I do LOVE how versatile this little, spring-y veggie is.

You could serve it as an asparagus stir fry or go a little more simple with some blanched asaparagus.

OR, go EXTRA easy and making it in the air fryer.

This has been my new favorite way to cook it lately, and I expect it will become yours too, because it’s tender but somehow crisp?

INGREDIENTS NEEDED

I love love LOVE my air fryer and I pull it out to use it on a regular basis because it’s just the best! Of COURSE we all love air fryer chicken nuggets and air fryer potato wedges, but today’s recipe is both tasty AND healthy and is the perfect side dish to compliment whatever you are serving! You are going to LOVE the short list of ingredients it takes to make this air fryer asparagus recipe- here’s what you will need:

  • Asparagus
  • Olive Oil
  • Garlic
  • Salt

HOW TO TRIM ASPARAGUS

Asparagus is one of those veggies that you need to prepare before you cook it, as the ends are woody, fibrous and tough, making them not suitable for eating. To cut off the ends, lay the asparagus spears on a large cutting board and use a sharp chef’s knife to slice off the ends. You will want to cut them where the white ends turn green. Another way to remove the woody ends is to simply snap them off one at a time. All the ends will need to break off at a slightly different point on the spear, so I prefer this way. 

HOW TO MAKE AIR FRYER ASPARAGUS

Prepare

Remove the stalky ends from the asparagus spears. Toss them in a large bowl with olive oil, garlic and a generous pinch of salt. 

Cook

Arrange the asparagus in a single layer inside your air fryer and turn it on. Cook the asparagus until it is tender!

Enjoy

Serve up your asparagus air fryer as desired and DEVOUR!

SERVING SUGGESTIONS

Now that your asparagus is all cooked and ready to enjoy (seriously- wasn’t that SO easy?!), you can dress it up or dress it down and eat it up. I recommend serving this asparagus recipe alongside a delicious coffee rubbed steak or baked honey cajun salmon and then adding some whole30 mashed potatoes to complete your meal! HOW TO STORE AIR FRYER ASPARAGUS

This asparagus recipe is a FANTASTIC make ahead, meal prep side dish because it lasts well when stored in the fridge. I recommend keeping it in an airtight container in the fridge for up to one week. 

HOW TO FREEZE

Once you’ve cooked up your asparagus in an air fryer, you can totally freeze it for a quick side dish for future meals. Simply store the cooked asparagus in an airtight, freezer safe container in the freezer for up to 3 months. Reheat it in the air fryer when you’re ready to eat!

The asparagus is done when it is vibrant and bright green in color and is crisp, yet slightly tender when pierced with a fork.

You can keep asparagus in the fridge for up to 5 days before cooking it.
